2 cups Wholemeal Spelt Flour (or flour of choice)
1 & 3/4 cups soy milk
2 Tbsp apple cider vinegar
2 Tbsp almond butter (or PB)
2 Tbsp natural sweetener to taste
4 tsp baking powder
1/2 tsp vanilla extract
Pinch of salt

Preheat waffle iron
Mix soy milk and vinegar in a jug and allow to sit for 5 mins
Mix dry ingredients, mix wet ingredients
Add wet to dry and stir until just mixed
Allow batter to rest for 5-10mins. It should become thick and fluffy
Pour into a greased waffle maker as per your machine’s instructions
