(Serves 16)

1 can black beans 400g (drained and 150ml aquafaba liquid reserved)
100g wholemeal spelt flour (or ground oats, almond meal or flour of choice)
150g sweetener (coconut sugar, raw sugar, xylitol)
100g cooked beetroot
40g cacao powder
2 tsp baking powder
1 tsp baking soda/ bicarb
1/4 tsp salt
1 tsp vanilla extract
2 Tbsp apple cider vinegar
25g dark chocolate chips (or chopped)
1 tsp cinnamon
1 tsp instant coffee granules (optional to bring out choc flavour)

Preheat oven to 180C/350F
Line a square baking tin
Whisk aquafaba with Electric hand whisk or KitchenAid for 12 mins until soft peaks form
Add the beans, beetroot, sweetener, vinegar, vanilla and half the aquafaba mix until smooth
In a bowl mix the remaining dry ingredients and choc chips
Add the bean purรฉe and stir through
Gently fold through the remaining whipped aquafaba
Spoon into the baking tin and smooth the top
Bake for 30mins or until a toothpick comes out clean
Allow to cool on a wire rack before slicing and icing if desired
