INGREDIENTS
• 1 cup coconut sugar
• 1/2 cup vegan butter
• 1 tsp vanilla extract
• 1 tsp peppermint extract (optional)
• 1 cup oat flour
• 1/4 tsp cinnamon
• 1/2 cup + 2 tbsp raw cacao powder
• 1 tsp baking soda
• 1/4 tsp baking powder
• 1/2 tsp pink salt
• 2 tbsp full fat coconut milk
• 1 cup vegan chocolate chips
INSTRUCTIONS
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream together softened vegan butter, sugar, and vanilla.
3. Add in all other ingredients & combine (excluding chocolate chips).
4. Mix in chocolate chips with hands.
5. Grab 1 tbsp of cookie batter, roll into a ball & place on baking sheet. Continue until all batter is gone.
6. Bake for 12 minutes. Let cool for 30 minutes. Enjoy!
