Lemon Poppy Seed Oats

Lemon Poppy Seed Oats

1/2 cup oats
Juice and zest of quarter lemon (more to taste)
1 Tbsp xylitol (to taste) or natural sweetener of choice
1 tsp poppy seeds
1/2 cup almond milk unsweetened
1/2 cup water
1 serve vanilla protein powder (optional for extra protein)

Put the lid on and give it a good shake. Put in the fridge overnight or for 30 mins (or blend for a smooth consistency)
Layer with coconut Yoghurt mixed with a little vanilla extract.
Top with granola or some toasted seeds for crunch
