Mushroom and Baby Tomato Pasta

Mushroom and Baby Tomato Pasta

INGREDIENTS⁣
• Spelt Spaghetti⁣
• 3 spring onions or 1 onion (cut in small pieces or thin ribbons if using onions)⁣
• 2 cups button mushrooms (sliced)⁣
• A handful of baby tomatoes⁣
• 2 tsp smoked paprika⁣
• 1/4 tsp chili⁣
• Salt to taste⁣
• 1 tbsp naturally brewed soy sauce (Shoyu or Tamari)⁣
• 1 tbsp tomato concentrate⁣
• 1/3 cup almond or soy cream⁣
• Small bunch of parsley⁣
• Extra Virgin Olive oil⁣

INSTRUCTIONS⁣
1. Cook the pasta.⁣
2. Sauté onions with spices, a pinch of salt and olive oil. When soft, add tomato concentrate, keep sautéing. Add mushrooms and chopped baby tomatoes, add soy sauce. Keep sautéing.⁣
3. When mushrooms are fairly soft, add cream. Cook for another minute or two.⁣
4. Add cooked pasta, more salt if needed, a splash of olive oil (for flavor - you can omit) and minced parsley.⁣
5. A nice addition is roasted baby tomatoes (optional). Just wash the tomatoes and roast them at 175°C (350°F) for about 15 minutes. Enjoy!⁣
