INGREDIENTS
• Spelt Spaghetti
• 3 spring onions or 1 onion (cut in small pieces or thin ribbons if using onions)
• 2 cups button mushrooms (sliced)
• A handful of baby tomatoes
• 2 tsp smoked paprika
• 1/4 tsp chili
• Salt to taste
• 1 tbsp naturally brewed soy sauce (Shoyu or Tamari)
• 1 tbsp tomato concentrate
• 1/3 cup almond or soy cream
• Small bunch of parsley
• Extra Virgin Olive oil
INSTRUCTIONS
1. Cook the pasta.
2. Sauté onions with spices, a pinch of salt and olive oil. When soft, add tomato concentrate, keep sautéing. Add mushrooms and chopped baby tomatoes, add soy sauce. Keep sautéing.
3. When mushrooms are fairly soft, add cream. Cook for another minute or two.
4. Add cooked pasta, more salt if needed, a splash of olive oil (for flavor - you can omit) and minced parsley.
5. A nice addition is roasted baby tomatoes (optional). Just wash the tomatoes and roast them at 175°C (350°F) for about 15 minutes. Enjoy!
