Peach Galette with a Crunchy Whole Wheat Crust

Peach Galette with a Crunchy Whole Wheat Crust

INGREDIENTS⁣
• 2 cups wholewheat flour⁣
• ½ cup cornstarch ⁣
• ¼ cup water⁣
• ½ cup liquid oil (recommended: coconut oil)⁣
• ½ cup coconut sugar (or muscovado sugar, etc.)⁣
• 1 tsp baking powder⁣
• 1 tsp baking soda⁣
• 2 flax eggs (mix 1 tsp flax flour + 3 tbsp water each, let stand for 15min)⁣
• A pinch of sea salt⁣
• 4 Peaches⁣

INSTRUCTIONS⁣
1. Process all the ingredients except for the peaches, until you get a homogenous, moist, and a little sticky mixture. Refrigerate the dough for 10 minutes.⁣
2. Preheat the oven to 200°C / 390°F.⁣
3. Slice the peaches. Remove the dough from the refrigerator and roll it out approximately 0,5cm thick (1/5 of an inch) on a floured roasting pan. Fill with the peach slices and bake for 20-25 minutes or until the base is golden brown.⁣
4. Accompany with ice cream or cream of your choice, preferably when the galette is still warm. Enjoy!⁣
