INGREDIENTS - BASE
• 1/2 cup cashews
• 1/2 cup hazelnuts
• 1/2 cup dates softened and pitted
• 1/4 cup cacao powder
• 1/4 cup buckinis (activated buckwheat)
• Pinch of sea salt
INGREDIENTS - FILLING
• 1 cup cashews (soaked in hot water for four hours, then drained)
• 1/2 cup dates softened and pitted
• 2 tbsp coconut oil
• 1/4 cup peanut butter
• 1/4 cup cacao powder
• 1 dessertspoon crushed cardamom
INSTRUCTIONS - BASE
Combine your ingredients in your food processor and pulse until broken into fine pieces, then blend until you’re left with a sticky dough. Press this into your springform tin and freeze as you prepare the filling.
INSTRUCTIONS - FILLING
Blend filling ingredients in a high-speed blender until creamy, pour over your base and freeze for at least four hours. Allow defrosting for 30 minutes before serving. Enjoy!
