INGREDIENTS - BASE
• ½ cup almonds
• 2 tbsp desiccated coconut
• 8 medjool dates
INGREDIENTS - MANGO ICE CREAM
• 2 Calypso mangoes
• 2 tbsp maple syrup
• 2 tbsp melted coconut oil
• ¼ cup full-fat coconut cream
• 1 tsp vanilla
• 2 tbsp shredded coconut, to decorate
INSTRUCTIONS
1. Process the almonds into fine pieces in a food processor. Add the coconut and dates. Process until fully combined and sticky. Press into a lined tray or container and set aside.
2. Blend all of the mango ice cream ingredients together until completely smooth, pour onto the base.
3. Sprinkle with shredded coconut and place in the freezer for a few hours. Let soften for a few minutes if it is too solid. Slice and serve once softened. Enjoy!
