
Rich Chocolate Cake (Vegan, GF, Oil-Free)

• 2 cups plain gluten-free flour
• 1 cup cacao powder
• 1/2 cup coconut sugar
• 1/2 tsp baking soda
• 1/2 tsp baking powder
• 2/3 cup unsweetened apple sauce
• 2 cups dairy-free milk (room temperature)
• 1/2 cup cacao liquor (or dark chocolate sweetened with coconut sugar)

• 1 cup coconut butter melted
• 1 cup light coconut milk
• 1/2 cup coconut nectar
• 1/2 cup cacao powder

1. Preheat your oven to 180° C (355° F) (160° C (320° F) if you have a fan oven) and grease two 20cm tins with a little coconut oil.
2. Put all of the dry ingredients into a mixing bowl and gently mix, then set to one side.
3. Melt the cacao liquor and then combine with the milk and applesauce.
Add this to the rest of the cake ingredients and whisk well until you have a smooth, velvety batter.
4. Divide the mixture between the two tins and bake for 25-30 minutes, until a skewer comes out clean/with a few crumbs.
5. Leave to cool for 5 minutes before turning the cakes out onto a cooling rack while you prepare the frosting.
6. For the Frosting: Simply combine all of the ingredients and once thickened, decorate – I used half for the middle layer and half for the top. Enjoy!
