INGREDIENTS - CRUST
• 1 cup walnuts
• 1 cup oats
• ½ cup date paste
INGREDIENTS - MANGO FILLING
• 1 Large mango
• 1-3 tbsp coconut milk
• 1-2 tbsp plant-based yogurt
• 1-2 passion fruits
• 1-2 tbsp chopped walnuts
INSTRUCTIONS
1. Combine walnuts, oats and date paste in a food processor and blend until you have a thick mixture. Place mixture into 2 medium-size tart tins and press it down and up the sides. Place in the fridge for at least an hour or overnight if required.
2. Prepare the mango filling when you are ready to eat. Place 1 large mango in a blender (remove the skin and seed!), add some coconut milk and blend until its smooth. Spoon into your tart bases.
3. Add a spoonful of plant-based yogurt, passion fruit, and chopped walnuts. Enjoy!
