INGREDIENTS
(serves 4)
-1 onion, diced
-4 cloves garlic, minced
-1 tsp cayenne, 1 tsp paprika, 1 tsp coriander, 1 tsp cumin
-3 tbsp tomato paste
-1 tbsp miso paste
-3-4 (600g) ripe tomatoes, diced/crushed
-1.5 cups white beans
-1.5 cups chickpeas
-lemon juice, salt & pepper, to taste
INSTRUCTIONS
In a large pot, sauté the onion and garlic for 3-4 minutes. Once fragrant, add in the spices, tomato paste, and miso, stirring to incorporate. Pour in tomatoes, beans, and chickpeas, then cover the pot. Let cook on low heat for 7-8 minutes until the stew has thickened, adding water if needed. Season with salt, pepper, and lemon juice. Serve warm and enjoy!
