INGREDIENTS (for 6 servings):
3 dl coconut milk
3 dl almond milk
2 espresso shots
2 tbsp peanutbutter
120 g vegan butter
120 g brown sugar
120 g dark chocolate
60 g all-purpose flour
1/4 tsp salt
METHOD:
1. Place milk, espresso and peanut-butter in a saucepan and heat over medium heat.
2. In another saucepan melt butter over medium heat, then add sugar and chocolate and stir until melted. Sift in flour and stir until completely smooth.
3. Pour the hot milk over the chocolate mixture and simmer for a couple of minutes while stirring.
4. Pour the pudding into a pudding mold and let it cool down completely for at least 2-3 hours before serving.
5. Serve with whipped coconut cream or with chocolate ganache.
