Ingredients for 9x15cm loaf pan
(Dry)
100g plain flour
2 Tbsp. tapioca starch
1.5 tsp baking powder
1/4 tsp pink salt

(Wet)
1 tsp apple cider vinegar
4 Tbsp (50g) sugar
3 Tbsp. melted coconut oil
2 Tbsp. almond milk or plant milk
150g ripe banana .
(Other)
10g matcha powder
30g walnuts (chopped)
Chocolate chips (optional)
Method:
(1) Preheat oven to 180⁰C. Line a loaf pan with parchment paper. (2) Place banana into a large bowl and mash it with a fork. Add rest of the wet ingredients and mix well. (3) In the same bowl, add the shifted dry ingredients, matcha powder, and walnuts. Mix until just combined. Don’t overmix. (4) Pour the butter into the prepared pan and smooth down evenly. Sprinkle chocolate chips over the top.
(5) Bake it for 35-40 minutes or until well baked.
