INGREDIENTS
peanut noodle stir fry (serves 3)
*sauce:
-1/3 creamy peanut butter
-1/4 cup soy sauce
-1/4 cup hot water
-1 tbsp rice vinegar
-1 tbsp maple syrup
-1 tsp. chili flakes
-optional: 1-2 tbsp sriracha / chili sauce
*noodles + stir fry:
-8 oz (224g) dry noodles
-1 onion, chopped
-4 cloves garlic, minced
-1 tbsp ginger, minced
-4 cups veggies of choice, chopped
INSTRUCTIONS
Boil noodles according to package instructions, then drain and set aside. Meanwhile, whisk together sauce ingredients until smooth and creamy. In a large pan, fry onion, garlic, and ginger with water/oil until fragrant. Add in veggies and cook until tender, about 7-8 mins. Pour in sauce + noodles, tossing until incorporated. Remove from heat and enjoy!
