(Makes 9-10)

1 cup all purpose plain or gluten free flour (or flour of choice)
1 tsp baking powder
1/4 tsp baking soda (bicarbonate)
1/4 tsp salt
1 tsp vanilla extract
3/4 cup soy milk
1/2 tsp apple cider vinegar
A pinch of stevia or 1/3 cup natural sweetener to taste

Preheat oven to 180C
Mix milk and vinegar and allow to stand for 5 mins to turn into thick buttermilk
Mix dry ingredients, mix wet ingredients
Add wet to try dry and stir until just mixed
Spoon or pipe into donut tray
Bake for 10mins until lightly golden
Icing
Blend soaked cashews with sweetener of choice (I used stevia drops) and a little nut milk until smooth
Sprinkle with pitaya/dragonfruit powder and freeze dried pomegranate if desired
