INGREDIENTS
(makes 12)
*dry ingredients
-1 1/2 cups whole-wheat flour (or use GF)
-1 tsp baking powder
-1/2 tsp baking soda
-1 tsp cinnamon
-1/4 tsp sea salt
*wet ingredients
-1/4 cup nut butter
-1/4 cup maple syrup
-1 tsp vanilla extract
-2 ripe bananas, mashed
-1/2 cup almond milk
-1 cup fresh blueberries
INSTRUCTIONS
Preheat oven to 375°F and grease a 12-cup muffin pan. In a large bowl, whisk together all wet ingredients except blueberries. Sift in the dry ingredients, then fold to combine. Mix in blueberries and pour the batter into the greased muffin pan. Bake for around 25 minutes, or until an inserted toothpick comes out clean. Let cool in pan for 10 minutes before removing to a wire rack.
