INGREDIENTS
(serves 3)
-8 oz (227g) dry pasta
-1 onion, chopped
-3 cloves minced garlic
-2 medium carrots, diced
-1 tsp dried oregano, 1/2 tsp Italian spices, 1/2 tsp chili flakes, 3/4 tsp sea salt
-2 tbsp tomato paste
-28 oz crushed tomatoes
-3/4 cup dry red lentils, rinsed
INSTRUCTIONS
Cook the pasta according to package directions; drain and set aside.
In a large pan, sauté the onion, garlic, and carrots for 4-5 minutes, until slightly softened. Add in the spices and tomato paste and coat evenly, then pour the crushed tomatoes and lentils to the pan.
Stir to combine. Bring to a simmer, then cover and cook on low for around 15 mins, stirring occasionally. Once lentils are tender, serve the mixture over cooked pasta and enjoy!
