INGREDIENTS
(yields 12)
-1-1/2 cups bread flour
-2 cups all-purpose flour, or use whole-wheat
-2 tbsp coconut sugar
-2-1/4 tsp quick-acting yeast
-3/4 tsp salt
-3 tbsp vegan butter, room temperature
-1-1/4 cup plant-based milk, warm
INSTRUCTIONS
In a large bowl, mix together all the above ingredients. Knead until smooth (~15 min), adding more flour as needed. Form into a ball and let rise in the bowl 1-2 hrs, covered, until doubled in volume. Meanwhile, combine 1/4 cup cocosugar + 1 tbsp cinnamon for the filling.
Once the dough has risen, punch it down and roll it into a 12' x 15' rectangle on a lightly floured surface. Brush with 2-3 tbsp softened vegan butter, then sprinkle on the sugar mixture. Tightly roll the up the dough lengthwise into a log. Cut into 12 equal pieces and place on a greased baking pan. Cover and let rest for 30 min.
Preheat oven to 375°F. Once ready, bake for 15-20 minutes until golden. Serve warm!
*substitutes: softened coconut oil/butter or margarine for vegan butter; any granulated sugar for coconut sugar.
