INGREDIENTS⁣
energy balls (yields 20-24)
-1/2 cup (128g) nut butter
-1/2 cup (110g) applesauce
-1/2 cup (120mL) plant-based milk
-1/4 cup (60mL) maple syrup
-1-2 servings vegan protein powder (optional; I used @nuzest)
-1 1/2 cups (120g) rolled oats
-1/2 cup (40g) shredded coconut
-4 tbsp cocoa powder OR 1 tbsp matcha powder
INSTRUCTIONS
In a large bowl, mix together the nut butter, applesauce, maple syrup, and plant-based milk. *If using protein, mix it in with another 1/4 to 1/2 cup of milk.* Add in oats, coconut, and cocoa/matcha powder. Once combined, cover and chill for 1 hour to firm up.
When ready, scoop out about 1 tbsp of the mixture and roll into a ball. Repeat with remaining dough & enjoy! Leftovers can be stored in the fridge or frozen.
