1/2 cup rolled oats
1 Tbsp chia seeds
1 carrot finely grated
1/2 zucchini grated (optional)
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
Pure stevia powder to taste (or 1 Tbsp sweetener)
1 tsp vanilla extract
1-2 cups water or almond milk as needed
1/2 scoop vanilla protein powder (optional)
1 Tbsp sultanas
Toppings
1 Tbsp desiccated coconut
1 Tbsp crushed walnuts

Cook all ingredients, except vanilla & protein (if adding) in a saucepan over medium for 5-8mins until thickened, adding more liquid as required. Take off heat and stir through remaining ingredients.
Pour into a bowl
Top as desired
