Choc Caramel Muesli Bars

(Serves 8-12)

3/4 heaped cup rolled oats (90g)
3/4 cup puffed brown rice (14g)
1/4 cup shredded coconut (20g)
2 Tbsp cacao powder
1/2 cup dates chopped (85g)
2 Tbsp pepita & sunflower seed mix (25g) toasted and chopped (great for crunch)
2 tsp Chia seeds
1/4 cup Tahini
3 Tbsp xylitol (or coconut sugar or equivalent stevia)
2-3 Tbsp almond milk
1/2 tsp vanilla extract

Add oats, puffed rice, coconut, chopped dates, chopped roasted seeds and Chia seeds to a bowl. Mix with hands
Add Tahini, sweetener, milk and vanilla to a saucepan and mix until smooth
Add to dry mix and stir well
Press into a silicon or lined square pan
Place in the fridge or freezer for a couple of hours to set
Slice and store in an air tight container in the fridge
