Pappardelle with Lentils Bolognese

Pappardelle with Lentils Bolognese

INGREDIENTS
2 tbsp olive oil
1 onion (minced)
2 garlic cloves (minced)
1 1/4 cup red lentils
400 g canned tomatoes
1/2 cup hot water
1 tsp sugar
salt and pepper
100 g walnuts (finely chopped)

250 g pappardelle
METHOD
1. Heat a saucepan over medium heat. Add in oil, onion and garlic cloves and brown for 5-10 minutes.
2. add in lentils and sauté for a couple of minutes then pour in tomatoes and simmer for 20-30 minutes (add water if needed).
3. Once the lentils are cooked adjust salt and pepper, add sugar and walnuts, stir well and set aside.
4. Boil water in a large pot, add 2 tbsp salt, and boil pappardelle until “al dente”.
5. Serve pappardelle with bolognese sauce and ENJOY
